A panoramic organic cheese farm in the Tuscan countryside
The tour starts with the visit to a panoramic organic cheese farm near Volterra. Our guide meets you at an agreed meeting point and accompanies you to the farm for the first part of the experience dedicated to the most delicious cheese of central Italy. The company is a fully organic farm producing not only delicious pecorino cheese but also cereal, honey and extra virgin olive oil. You will meet Giovanni and his family, cheese producers for generations, whose legacy began in Sardinia and was transplanted to Tuscany over 50 years ago. Our guided tour starts with a brief history of the company, pioneers in adopting organic farming in the region during the early ’90s. The we will move to the workroom, where cheese production happens with its seasonal variations — from milk curdling to cheese salting and rinsing. You will experience all the stages of the pecorino making process and learn the techniques for an organic production. We will then visit the ageing cellars and the milking facility where sheep are milked to make the best cheeses.
A cheese based lunch
Afterward, you’ll sit in the beautifully restored former barn and enjoy a lovely lunch featuring a wide variety of cheese-based dishes and other local specialties. Lunch consists in a selection of cheeses and salami, a fresh cheese caprese with tomatoes, farro salad, a zucchini carpaccio, a cheese fondue and dessert. You will also taste the excellent extra virgin olive oil made by the farm and a delicious red or white wine from the Volterra wine district.
A very unique beer company
In the afternoon, your guide takes you to discover an extraordinary brewing experience within the complex of the salt mines of Volterra. This unique brewery stands alone as the only one of its kind, transforming the energy from salt extraction into the driving force behind its beer production. It is also the first brewery in Italy operating inside a salt mine and using the salty water for the extraction of salt for brewing beers.
After a first introduction to this eco-sustainable project, you’ll get to savor four carefully crafted beers.

The destinations reached during this activity are in the Tuscan countryside, in areas off the beaten track that cannot be reached by public transport. We highly recommend renting a car or a scooter in order to reach them. As an alternative, we can offer a valued service by chauffeured car, van or minibus. Any cost of transportation is to be added to the rates displayed on the rate table of this page.
